Bacon, Pineapple, Chicken Kabobs

What’s better than bacon, pineapple, and chicken? Bacon, Pineapple, Chicken Kabobs! They’re a delicious, easy anytime snack that everybody come partytime is sure to love!

Ingredients:

  • 5 Boneless Skinless Chicken Thighs (About 2 Lbs)
  • 1 Pineapple, Cut into 1 1/2 - Inch Chunks
  • 2 - 3 Summer Squash, Cut Into 1½-Inch Chunks
  • 1 Large Onion, Cut Into 1 1/2 - Inch Chunks
  • 12 Strips Bacon 6 Long Skewers

Directions:

  1. Chop chicken thighs into 1 1/2 inch chunks.
  2. Chop pineapple, squash and onion into 1 ½ inch chunks.
  3. Cut the strips of bacon into thirds.
  4. Wrap bacon around chicken and pineapple chunks.
  5. Slide chicken, pineapple, squash and onion to each skewer, repeat as room on the skewer allows.
  6. Grill the kabobs for 10-15 minutes, turning a couple of times until chicken is cooked through.
