- 5 Boneless Skinless Chicken Thighs (About 2 Lbs)
- 1 Pineapple, Cut into 1 1/2 - Inch Chunks
- 2 - 3 Summer Squash, Cut Into 1½-Inch Chunks
- 1 Large Onion, Cut Into 1 1/2 - Inch Chunks
- 12 Strips Bacon 6 Long Skewers
- Chop chicken thighs into 1 1/2 inch chunks.
- Chop pineapple, squash and onion into 1 ½ inch chunks.
- Cut the strips of bacon into thirds.
- Wrap bacon around chicken and pineapple chunks.
- Slide chicken, pineapple, squash and onion to each skewer, repeat as room on the skewer allows.
- Grill the kabobs for 10-15 minutes, turning a couple of times until chicken is cooked through.
