Coconut Shrimp

Cocktail shrimp are so 2005, but that doesn’t mean guests won’t expect to see them — at least in some form. Sweeten up your next soirée with coconut battered shrimp! Ready in just minutes, these tempting little treats are fried in coconut, flour and curry powder for a sweet, unexpected kick your guests will love!

Ingredients:

  • Oil for frying
  • 1/2 cup of flour
  • 2 tsp. of curry powder
  • 2 cups of shredded coconut
  • Salt and pepper to taste
  • 1 lb. cleaned shrimp
  • 2 eggs, beaten

Directions:

  1. Preheat oil in skillet or wok on medium heat to 350 degrees.
  2. Mix flour, curry, coconut, salt and pepper.
  3. Dip shrimp in egg mixture then roll in flour mixture. Repeat.
  4. Cook about 3 minutes on each side or until golden brown.
