Balsamic Grilled Veggies

Summer brings a lot of things, but the tastiest of them is fresh vegetables! Pick produce from every corner of your garden for this fresh medley. Zucchini, yellow squash, vidalia onion, mushroom, bell pepper and asparagus make a delicious combination, and the zing of balsamic dressing makes them sing!


  • 2 Zucchini
  • 2 Yellow Squash
  • 1 Vidalia Onion
  • 1 Portobello Mushroom
  • 1 Bell Pepper (Color of Your Choice)
  • 1/2 Bunch Asparagus
  • 5 Oz Balsamic Dressing


  1. Preheat grill to 350 degrees.
  2. Slice zucchinis and yellow squash in half lengthwise.
  3. Peel and slice onions into rings and then slice rings into semi-circles.
  4. Remove stem from portobello mushroom.
  5. Cut 1/2 inch off bottoms of asparagus.
  6. Cut bell peppers into quarters.
  7. Combine ingredients, toss with balsamic dressing and marinate for 1/2 hour.
  8. First, put on the onions on the grill for 5 minutes.
  9. After 5 minutes, turn the onions and add the rest of the veggies.
  10. Grill for an additional 10-15 minutes.
