Chai Cheesecake Bars

Make your favorite spiced tea a favorite fall spiced dessert! Baked with just a few simple ingredients, these Chai Cheesecake Bars make a yummy treat at any autumn-inspired get-together or winter date night in!



  • ½ Cup Unsalted butter, melted
  • ¼ Cup Brown sugar
  • 1 Tbs. Vanilla extract
  • ¼ Tbs. Salt
  • ½ Tbs. Cinnamon
  • 1 Cup All purpose flour
  • Filling

  • 16 Oz. Cream cheese, room temperature
  • 1 Cup Sugar
  • ¼ Cup Heavy cream
  • 3 Eggs
  • 1 ½ Tbs. of an open bag of unbrewed chai tea



  1. Line a 9x9 pan with parchment paper, spray lightly with cooking spray set aside.
  2. Pre heat oven to 300 degrees F.
  3. In a mixing bowl, stir together melted butter, brown sugar, vanilla, salt, and cinnamon.
  4. Stir in flour and stir until thoroughly combined.
  5. Bake for 15 minutes, and set aside to cool for 5-10 minutes.
  6. Change oven temp to 325 degrees F.
  7. Filling

  8. In the bowl of a stand mixer add cream cheese and sugar and beat until smooth.
  9. Add in remaining filling ingredients and beat until combined.
  10. Pour filling onto the crust, using a rubber spatula to get all of the filling out of the mixing bowl.
  11. Carefully jiggle the pan very slightly to get all of the filling in a nice even layer.
  12. Bake for 35-40 minutes.
  13. Cool at room temperature for about 30 minutes, then cover and refrigerate until ready to serve.
