Chorizo Roasted Poblano Queso

It wouldn’t be game day without a mighty snack table spread! Make sure the heat corner is covered with Chorizo Roasted Poblano Queso! Roasted poblano peppers give everybody’s game day MVP a little extra kick your guests will love! Serve with chips and veggies.


  • ½ Lb Chorizo
  • 1 Lb White American cheese (get the good stuff)
  • 1 Cup Half and Half
  • 1 Poblano pepper
  • ½ Tsp Cumin
  • ¼ Tsp Salt
  • ¼ Tsp Pepper
  • ¼ Tsp Red pepper
  • 1 Dash Chili powder


  1. Char poblano under broiler until skin turns blistery.
  2. Let it cool and remove skin. Then chop.
  3. Cook chorizo in sauté pan over medium heat until brown.
  4. In a double boiler on low heat (as slow boil), add the cheese and about half of the half and half.
  5. Constantly stir mixture until cheese begins to evenly melt, continuing to add half and half to result in the consistency you desire.
  6. Add chopped roasted poblano, cooked chorizo and all the spices to the mixture and stir until combined.
  7. Serve hot with your favorite vegetable or chips.
