Lemon Scones with Strawberry Peach Jam

What if we said that you could spread BACARDI® Mixers on your scones in the morning? It’s true—with our Strawberry Peach Jam and Lemon Scones! With frozen peaches and BACARDI® Mixers Strawberry Daiquiri, they’re a fruit-filled treat your friends will love!



  • 4 cups Flour
  • 1 Tbsp Baking powder
  • 1 tsp Baking soda
  • Pinch of Salt
  • ½ cup Sugar
  • 2 cups Buttermilk
  • ½ lb chilled Butter
  • 1 Lemon zested
  • Jam

  • 1 can BACARDI® Mixers Strawberry Daiquiri Mix
  • 8 ounces frozen Peaches



  1. Simmer Bacardi® Mixers Daiquiri Mix and peaches for 45 minutes to an hour over medium heat until most of the water has cooked off.
  2. Puree and chill.
  3. Scones

  4. Preheat oven to 400 degrees.
  5. In a medium mixing bowl, whisk together dry ingredients.
  6. Cut in cold butter.
  7. Add lemon zest.
  8. Mix in buttermilk.
  9. Knead dough with your hands, form into a circle about 1 inch thick and 7 inches in diameter
  10. Slice into 6 triangles (similar to slicing a pizza), place on lightly greased baking sheet.
  11. Bake at 400 degrees for 15-20 minutes.
  12. Scones should be slightly golden brown on top when done. Serve with jam.
